I love cookies, love love love them! Whilst travelling around america a few years back I lived on a steady diet of burgers, Dr Pepper and cookies, I’ve been on the hunt for the the best cookie recipe ever since then. I am here to tell you I have found it, and in the most unlikely of places!
Anna is one of my favourite bloggers, she writes all about skincare and beauty as well as sharing snippets of her life in her vlogs, last week Anna uploaded a vlog of her making the most awesome cookies. After I rustled some of my own up using her recipe I shared a picture on Instagram and everyone went bonkers, so I thought only right I shared Anna’s recipe and my own efforts with a few tweaks.
First up, here are the ingredients you will need;
- 200g Lightly Salted Butter
- 300g Caster Sugar
- 1 Large Egg
- 75g Cocoa Powder
- 275g Self Raising Flour
- 200g Milk Chocolate – chopped into chunks
Then it couldn’t be more simple…
First up, pre-heat the oven to 200 degrees. Then melt the butter slightly and cream together with the sugar until smooth, add the egg and beat again. Once you have a smooth and creamy consistency throw in the flour & cocoa powder along with the chocolate chunks.
Don’t worry if the mix is a little dry, it needs to be quite dry, however if it is a struggle to mix together then add a small splash of milk
Once all the ingredients are blended together, grease or line two baking trays with grease proof paper and using an ice-cream scoop separate the mix into 12 balls placing on the trays. To get the melt in the midlle yumminess add a square of chocolate to the top of each cookie ball slightly pressing down.
Once the oven is to temperature, pop the cookies in for 20 minutes, when you take them out they will be wobbly, don’t worry and don’t put them back in the oven. Leave them to rest on the side for at least 30 minutes, once you have been patient you can grab a mug of coffee and tuck in!
